INGREDIENTS
For the No Chicken
- 2 Moving Mountains Plant Based No Chicken Burgers
For the Yaki Udon
- 200g Clearspring Udon Noodles
- ½ red onion, thinly sliced
- ½ carrot, cut into matchsticks
- ¼ pointed cabbage, thinly sliced
- ½ fresh red chilli, finely sliced
- 1 tbsp vegetable oil
For the sauce
- 1 tbsp tamari soya sauce
- 1 tbsp mirin
- ½ tbsp brown rice vinegar
- ½ tsp fresh ginger, finely grated
- ½ garlic clove, finely grated
To serve
- ½ lime, cut into wedges
- Clearspring sushi ginger (opt.)
- Clearspring irigoma toasted sesame seeds (opt.)
METHOD
- Cook the Moving Mountains No Chicken Burgers from frozen, following the on-pack instructions.
- Prepare the sauce by mixing the tamari, mirin, brown rice vinegar, ginger and garlic together in a small bowl.
- Prepare the Clearspring Udon Noodles according to the pack instructions. Drain well and set aside.
- Heat the vegetable oil in a large frying pan or wok over a medium-high heat. Add the red onion and stir-fry until softened.
- Add the carrot, pointed cabbage and fresh chilli. Stir-fry until the vegetables are tender but still have some bite.
- Pour over the sauce and stir through the vegetables until glossy.
- Add the cooked udon noodles and toss everything together until evenly coated and heated through.
- Slice the cooked No Chicken Burgers into strips while hot.
- Divide the Yaki Udon between two bowls and top with the No Chicken Burger strips.
- Serve immediately with fresh lime wedges.
