INGREDIENTS
For the burgers
- 4 Moving Mountains Plant Based Quarter-Pounder Burgers
- 1 tsp dried oregano
- ½ tsp garlic powder
- ½ tsp sweet paprika
- ½ tsp black pepper
- Small pinch of salt
- 1 tbsp olive oil
For the tzatziki
- 150g vegan Greek-style yoghurt
- ½ cucumber, finely grated
- 1 small garlic clove, finely grated
- 1 tbsp lemon juice
- 1 tbsp fresh dill, finely chopped
- Salt and pepper, to taste
To serve
- 4 large vegan pitas
- 100g I Am Nut OK Fetamorphosis Vegan Feta Block
- ½ cucumber, thinly sliced
- ½ red onion, thinly sliced
- Fresh parsley
- Fresh mint
- Lemon wedges
METHOD
- Start by making the tzatziki. Finely grate the cucumber and squeeze out any excess liquid. Mix with the vegan yoghurt, garlic, lemon juice and dill. Season to taste with salt and pepper, then set aside.
- Mix the oregano, garlic powder, paprika, black pepper and salt in a small bowl.
- Heat the olive oil in a large frying pan over a medium-high heat. Add the frozen Moving Mountains Burgers and cook for 2-3 minutes, until the bottom has started to brown and the burgers have softened slightly.
- Flip each burger and immediately press down firmly with a spatula to smash it thin. Sprinkle over a light layer of the seasoning and cook until the edges are deeply golden and crispy.
- Flip the smashed burgers, season the other side lightly and continue cooking until hot throughout and cooked thoroughly. The burgers may still remain pink in the middle when cooked from chilled or fully frozen.
- Warm the pitas in a dry frying pan, toaster or oven until soft and lightly toasted.
- Assemble the pitas. Spread a generous spoonful of tzatziki inside each pita, then add the crispy smashed burger. Top with crumbled I Am Nut OK Fetamorphosis Vegan Feta Block, cucumber, red onion, parsley and mint.
- Finish with a squeeze of fresh lemon and serve immediately.
