INGREDIENTS
- 2 Moving Mountains No Chicken Burgers
- 2 seeded bread buns
- 2 fresh chillies
- 2 spring onions
- Sesame seeds
- Salad leaves
- Vegan mayonnaise
- French fries
- ¼ red cabbage (for the slaw)
- 1 carrot (for the slaw)
- 1 tbsp sesame oil (for the slaw)
- 3 tbsp rice wine vinegar (for the slaw)
- 1 tsp soy sauce (for the slaw)
- Pinch of salt (for the slaw)
- 5 tbsp brown sugar (for the sauce)
- 2 tbsp soy sauce (for the sauce)
- 2 tbsp gochujang, chilli paste (for the sauce)
- 2 large garlic cloves (for the sauce)
- 1 small piece of ginger (for the sauce)
- 2 tsp sesame oil (for the sauce)
METHOD
- Prepare the sticky Korean style sauce. Mince the garlic cloves and ginger, then add to a saucepan with all the other sauce ingredients and gently simmer until they form a syrupy, sticky sauce.
- Set the sauce to one side, then cook the No Chicken Burgers and french fries, following the instructions on the packet.
- Whilst the burgers cook, prepare the other ingredients. Finely chop the fresh chillies and spring onion garnishes, then slice the carrot and red cabbage into small thin pieces for the slaw.
- Combine the slaw ingredients in a large bowl and set aside.
- Toast the inner side of the seeded bread buns and remove the burger and fries from the oven.
- Season the french fries with salt and pepper, chillies and spring onions, saving some for the burgers.
- Assemble the burger. Take the toasted bread bun and apply a thin layer of vegan mayonnaise, add some salad leaves and a generous helping of the slaw, then top with extra chillies, sesame seeds and spring onion. Stack the burger on top and add a thick layer of the sticky Korean style sauce, then finish with more chillies, sesame seeds, spring onion and the final bread bun.
- Serve with extra sauce on the side and the spicy fries.
