INGREDIENTS

1 pack Moving Mountains Superfoods Spicy Bites

4 baby cucumbers (ribboned)

radishes (sliced)

1 avocado

1 carrot (grated)

Bulgar wheat (or couscous/ rice/ a grain of your choice!)

Mint

Pomegranate

Olive oil

Salt & Pepper

 

To finish:

Pickled red onions

Olive oil

Salt & Pepper

Lemon wedge

METHOD

  1. First prepare your bulgar wheat (or a rice/ grain of your choice!). Once prepared, combine with some roughly chopped mint and pomegranate seeds. Season to taste with olive oil, salt and pepper and set to one side.
  2. Next, cook your Moving Mountains Superfood Spicy Bites with a splash of oil, in a frying pan on medium heat for 8 minutes.
  3. Whilst your spicy bites are cooking, prepare your vegetable elements. Grate your carrot, ribbon your cucumbers, slice your radishes and avocado.
  4. When all your elements are ready, begin to assemble your bowl. Start with your bulgar wheat base and then top with your vegetables and superfood spicy bites.
  5. We recommend finishing your bowl with a drizzle of olive oil, wedge of lemon, salt and pepper to taste and a sprinkle of pickled red onions for a sweet and tangy crunch alongside your spicy bites.
