INGREDIENTS

4 Moving Mountains Superfood Sausages

1 heirloom Tomato

1 block Vegan feta

½ cup Kalamata olives

A handful fresh mint

A handful flat leaf parsley

5 baby cucumbers

½ Red onion

 

Salad dressing:

¼ cup extra virgin olive oil

3 tablespoons red wine vinegar

1 garlic clove, minced or crushed

½ teaspoon dried oregano

¼ teaspoon Dijon mustard

salt and pepper to taste

 

To finish:

chili flakes

olive oil

METHOD

  1. Begin by pan frying your Moving Mountains Superfood Sausages on medium heat for 6 minutes, turning regularly.
  2. Whilst your sausages are cooking , whip up a salad dressing by adding all the Greek salad dressing ingredients to a medium mixing bowl and whisking thoroughly.
  3. Next prep your tomatoes, cucumbers and red onion to your liking, we did a combination of slicing and dicing. Combine your prepped salad ingredients and toss with your dressing.
  4. Once cooked half your sausages add to your salad. Finish by crumbling feta over your salad and garnish a pinch of chili flakes and final drizzle of olive oil.
