INGREDIENTS

8 Moving Mountains Superfoods Crispy Dippers

2 baby gem lettuces, quartered lengthways

1tsp olive oil

 

For the vegan dressing:

1/4 cup plain hummus

1 tsp spicy mustard

1/2 tsp lemon zest

3 tbsp lemon juice

2 tsp capers (finely minced/smashed, plus 3 tsp brining juice)

4 cloves garlic, minced

1 healthy pinch each sea salt + pepper (more to taste)

 

To finish:

croutons

grated vegan hard cheese

METHOD

  1. Start by placing the Moving Mountains Superfood Crispy Dippers on a preheated frying pan and cook for 9 mins, turning regularly.
  2. In a separate pan add some olive oil, and place on a high heat.
  3. While the pan is heating up, toss the gems in some olive oil, salt, and add any of your favorite spices.
  4. Add the prepped baby gems to the skillet and chargrill all over. Once cooked, set your crispy dippers to one side, and remove the baby gem lettuce, place on paper towel to remove excess oil and liquid.
  5. Next, prep your salad dressing in small mixing bowl, adding hummus, spicy mustard, lemon zest and juice, minced capers and brine, and minced garlic.
  6. Whisk thoroughly to combine the dressing. Add a little hot water to thin the dressing until pourable and then continue to whisk until creamy and smooth. Season to taste and adjust flavor as needed
  7. Finally, combine your crispy dippers and chargrilled baby gem lettuce in a serving bowl, toss with the dressing, and finish with a generous number of croutons and grated vegan cheese.
