INGREDIENTS

2 Moving Mountains Superfood Burgers

200g mixed cherry tomatoes

100g picked red onion 

mixed greens

2 Pickles (ribboned)

lemon juice and olive oil to dress

1 handful of Mixed seeds

¼ cup herby vegan mayo

 

Home-made quick pickled red cabbage:

½ head of red cabbage (shredded)

¾ cup vinegar

¾ cup water

1 tablespoon sugar

1 teaspoon salt

1 tablespoon black peppercorns

METHOD

  1. Begin by quick pickling your cabbage by briefly boiling pickling ingredients in a small saucepan, covering cabbage in the mixture and refrigerating for 1 hour (do the same for red onion If you’re doing it yourself).
  2. Fry the Moving Mountains Superfood Burgers with a splash of olive oil on medium heat for 3-4 mins on each side.
  3. While the burgers are cooking, assemble salad ingredients in a large bowl.
  4. Toast seed mix in a frying pan on low heat, remove from heat when they just start to brown and shake regularly to avoid burning.
  5. Toss with toasted seeds, lemon juice, and olive oil.
  6. Serve up with the warm burger on top and herby mayo on the side.
