INGREDIENTS

8 Moving Mountains Superfood Falafel

300g hummus (store-bought or homemade)

1 red pepper,

½ a cucumber

½ a red onion,

1 large carrot (grated or julienned)

paprika

parsley

lemon juice

1 teaspoon extra virgin olive oil

 

To finish:

chilli flakes

lemon wedges

1 toasted flatbread (slices)

METHOD

  1. Start off by placing your Moving Mountains Superfood Falafel in a pan of hot oil and cook on medium heat for 8-10 mins.
  2. While the falafel is cooking start creating your platter by spreading a layer of houmous on a large plate.
  3. Sprinkle paprika and a drizzle of olive oil over the houmous. Next, dice your cucumber, red pepper, red onion, and layer onto of your houmous alongside your crispy cooked falafel.

  5. Prepare a side salad of carrot and leafy greens, dressed with olive oil and lemon juice, Garnish with chili flakes and lemon wedges and serve with toasted flat bread slices.
