INGREDIENTS

4 Moving Mountains No-Chicken Burgers

4 vegan burger buns

1 red onion, sliced

1 avocado, sliced

4 slices of vegan cheese (American style)

2 tbsp vegan mayo

1 tbsp sriracha

1 tbsp sweet chili sauce

3tsp of soy sauce

1tbsp grated ginger

2 cloves of garlic, crushed

½  teaspoon of cornflour

4 tablespoons of water

1 tablespoon of vegetable oil

METHOD

  1. First, start to cook your Moving Mountains No Chicken Burgers, following the on-pack instructions.
  2. While the burgers are cooking, prepare the sauces. In a small bowl, whisk together the vegan mayo, sriracha, and sweet chili sauce.
  3. In another small bowl, mix the soy sauce, grated ginger, minced garlic, cornflour, and water. Add the sauce to a small saucepan and bring to a simmer. Cook until slightly thickened (about 2 minutes). Set both sauces aside.
  4. Once the burgers are cooked, remove them from the oven and set them aside to cool slightly.
  5. Slice the red onion and avocado. Heat the vegetable oil in a pan over medium heat. Add the sliced red onion and sauté for 5-6 minutes or until softened.
  6. Finally assemble the burger, place a slice of vegan cheese on the bottom half of the burger bun. Place a no chicken burger on top of the vegan cheese, followed by a spoonful of the soy sauce mixture, sautéed red onion and sliced avocado. Drizzle the sweet chili mayo sauce on top. Serve with a side of sweet potato fries or onion rings.
