Moving Mountains® English Muffin Sausage Burger

- 2 Moving Mountains Sausage Burgers
- 60g spinach leaves
- 1 avocado, peeled and destoned
- 1 lime, juiced
- 2 English muffins
- ½ tomato, sliced
- Handful of coriander
- Chilli oil (optional)
1. Cook the sausage burgers on a frying pan, following the instructions on the packet.
2. Add the spinach to the same pan for the last minute of cooking. Transfer the spinach into a small bowl.
3. Mash the avocado with a fork. Season with lime juice, salt and pepper. Toast the English muffins.
4. Assemble the muffins, starting with spreading the avocado over the bottom half, adding THE Sausage Burger, wilted spinach, tomato, more avocado and drizzling the chilli oil over. Close the muffin with the top and enjoy!
