INGREDIENTS

Leaves from 1 large cauliflower — no wastage over here

1 Moving Mountains No Chicken Burger

1 1/4 cups fresh parsley leaves (freshhhh) 

Half a leftover red onion 

¼ of red pepper (or whatever your veg drawer has to offer).

2 odd tomatoes 

Half a cup of mint lives 

1 small onion, thinly sliced

Olive oil/ balsamic vinegar (or your favourite dressing already in your fridge).

METHOD

  1. Preheat an oven to 220°C. Grab your leftover cauliflower leaves Break of leaves from 1 large cauliflower, chop those into thin pieces and place onto a baking tray. Drizzle with 2 tablespoons of the oil, sprinkle some salt and pepper. Roast until cooked through and golden brown, about 20 minutes.
  2. Whilst your cauliflower leaves roast, cook your Moving Mountains No Chicken Burger
  3. Next, prepare the rest of your salad ingredients. Chop your tomatoes, red onion, red pepper, parsley, mint (or whatever veg drawer leftovers you have!))
  4. Then, assemble your salad. Top with your sliced No Chicken Burger and finish the salad with a dressing of your choice.
