INGREDIENTS

2 Moving Mountains No Chicken Burgers

4 tsp Cajun seasoning

200g linguine pasta

1 tbsp olive oil

3 garlic cloves, minced

1 tsp miso paste

1 tsp Cajun seasoning

270ml vegan cream

100 ml vegetable stock

1 bay leaf

150g broccoli

Olive oil

Salt, pepper

METHOD

  1. Preheat the oven to 180°C. Cook the Moving Mountains No Chicken Burgers following the on-pack instructions. Chop the burgers into small chunks. Whilst they are still warm, transfer the chunks into a small mixing bowl and toss with the Cajun seasoning.
  2. Cook the pasta following the instructions on the packet and save a couple of tablespoons of pasta water for the sauce.
  3. Whilst the pasta is cooking, prepare the sauce. Add the oil to a pan, and slowly warm it up over low heat. Add the garlic and keep stirring for 1 minute. Add the Cajun seasoning and slowly pour the cream and stock over. Add the bay leaf and simmer for 5-8 minutes, stirring occasionally. Mix in the miso and add the pasta with a splash of pasta water. Add the chicken. Mix them all together.
  4. Cook the broccoli with a drizzling of olive oil and a pinch of salt under a hot grill for 2-3 minutes. Serve the pasta with a side of charred broccoli.
